I learned how to make this dish without deep frying in oil by modifying the way the owner of an Italian restaurant I worked at many years ago prepared the dish, which is different from the way it’s usually prepared. I peel a large eggplant and slice it lengthwise as thinly as possible and grill the slices on my stove top griddle, using only spray olive oil, until the slices are cooked on both sides. I then layer the thin slices in individual ramekin dishes and cover with marinara sauce and vegan parmesan and mozzarella. I cover the ramikins in foil and bake for about 20 minutes at 375 degrees, until the cheese is melted. Also made steamed Romano beans with mushrooms as a side. Cheers!🥂
