What's for Dinner, Sunday, Sept. 7, 2025

I have a rather unusual recipe to follow using turnip greens. If it's good, it just goes to show something can come out of late night trolling the web sites of cookbook authors.

The name of the recipe is "Marmalade of Spring Greens" by Paula Wolfert. Wolfert is known for her Mediterranean recipes, which happens to be one of my favorite cuisines (the other being Asian).

It has garlic, anchovy fillets, capers, Kalamatas, black or yellow raisins, and hot pepper flakes. All this is added to 2 lb of greens. It becomes like a bruschetta, and is put on toast rounds.

To go with it, a flounder filet.

Kiwi-pineapple kombucha.

Dessert: Honeydew melon.

We’ve got several varieties of ice cream in the freezer for dessert.

My oldest son brought home a flavor from a local creamery …. Brit Brat. Malted milk ice cream with chunks of Kit Kat bars.

Ingredients
1 pound chicken breast, cubed
1 cup pineapple, cubed
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup jasmine rice

1 teaspoon ginger, grated
Salt and pepper, to taste
¼ cup green onions, sliced
1 tablespoon sesame seeds
Directions
Cook the Chicken
Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown and fully cooked. Remove and set aside.

Sauté the Vegetables
In the same skillet, add onion, garlic, and red bell pepper. Cook until softened and fragrant.

Add Pineapple
Stir in cubed pineapple and cook for 2 minutes to release sweetness.

Cook the Rice
Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Stir, bring to a boil, then reduce to low heat. Cover and simmer for 18–20 minutes, until rice is tender and liquid absorbed.

Combine and Finish
Return chicken to skillet, mixing well to coat with sauce and rice. Heat through.

Serve
Garnish with sliced green onions and sesame seeds.

Homemade puréed vegetable soup: butternut squash, zucchini, carrots, celery, spinach, sweet red peppers, celery, onion, garlic….and a bit of orange juice, salt, pepper, thyme, dash of cayenne

I put together a zucchini casserole. I made a fresh batch of biscuits, just the dry ingredients. Other ingredients are eggs, grated zucchini, chopped onion, vegetable oil and cheese.

While it was baking, I put together a chicken casserole. The original recipe was from Stove Top stuffing, but I haven't had that in years. I made a small batch of stuffing from the last of last week's loaf of bread. The original recipe also called for raw chicken chunks, sour cream, a can of cream of chicken soup, mixed vegs, and cheese. I used Caesar salad dressing, made some chicken gravy, and followed the recipe. When it was baked through, I added some extra cheese on top, and some french-fried onions.

I offered some of the lemon bars to my friend. When she picked them up today, she gave me 4 pieces of spanakopita. Yum! I took the rest of the lemon bars to my daughter's and she gave me a big roll of venison summer sausage. Yum! I think. I'm planning to use it in stir fry and pasta sauce. If anyone has any ideas, I'm game (see what I did there?)

It was easy, and good. We also had mashed potatoes (made by my son, who does them better than I do), and broccoli with lemon and butter.

I learned how to make this dish without deep frying in oil by modifying the way the owner of an Italian restaurant I worked at many years ago prepared the dish, which is different from the way it’s usually prepared. I peel a large eggplant and slice it lengthwise as thinly as possible and grill the slices on my stove top griddle, using only spray olive oil, until the slices are cooked on both sides. I then layer the thin slices in individual ramekin dishes and cover with marinara sauce and vegan parmesan and mozzarella. I cover the ramikins in foil and bake for about 20 minutes at 375 degrees, until the cheese is melted. Also made steamed Romano beans with mushrooms as a side. Cheers!🥂

Asian pork tenderloin; good but not great. Ina Garten’s lemon herb pork tenderloin recipe remains my favorite. Served with Texmati rice (American hybrid rice - foolproof), baby carrots, and stir fried bok choy (delicious).
