I put together a zucchini casserole. I made a fresh batch of biscuits, just the dry ingredients. Other ingredients are eggs, grated zucchini, chopped onion, vegetable oil and cheese.
While it was baking, I put together a chicken casserole. The original recipe was from Stove Top stuffing, but I haven't had that in years. I made a small batch of stuffing from the last of last week's loaf of bread. The original recipe also called for raw chicken chunks, sour cream, a can of cream of chicken soup, mixed vegs, and cheese. I used Caesar salad dressing, made some chicken gravy, and followed the recipe. When it was baked through, I added some extra cheese on top, and some french-fried onions.
I offered some of the lemon bars to my friend. When she picked them up today, she gave me 4 pieces of spanakopita. Yum! I took the rest of the lemon bars to my daughter's and she gave me a big roll of venison summer sausage. Yum! I think. I'm planning to use it in stir fry and pasta sauce. If anyone has any ideas, I'm game (see what I did there?)
