2. Corned beef

I cooked a corned beef in the sous vide last night that's resting in the refrigerator this morning. I'll make a Reuben sandwich for myself, some tomato soup, and a green salad. K will have some beef, leftover mac and cheese, and salad, but she's not a fan of sauerkraut, so I'll fry her some fresh cabbage instead.

She's the kind of shopper who hits the grocery stores after holidays and buys specialty cuts of meat marked down for quick sale, then freezes them. We've got a couple hams in the freezer and at least one turkey breast, lol. But we'll make short work of that corned brisket!

Rereading this response reminds me how fortunate K and I are to have freezers full of food that we can prepare and eat in the safety of our home. So many people, all over the world, have so much less. In Gaza starving families risk death for a bag of rice. Much of the world is wracked by famine and food insecurity. Children go to bed hungry, even here. We are so fortunate.
