ground brisket for burgers. Noticeably more beef flavor than any of the angus chuck etc. I just eat them on good buns with raw onion and a smear of catsup. I don't want to load them too heavily with other things and mask completely that improved beef flavor. The catsup and onions tone it down just a bit but it still comes through nicely.
