I know it's not an "inner demon" outside of the metaphorical construct

IT is a nervous system that is used to the interference of alcohol. As a result, the nervous system has had to make up for the altered neural connections - and it has no idea that alcohol is no longer present, hence the restless leg syndrome, etc
