3. If you are on iOS 6, you have to enable dictation. If you are on iOS 7, it comes enabled.

Look on the lower left of the onscreen keyboard. If enabled, there is a little microphone key.

To enable it on iOS 6 go to: Settings > General > Keyboard > Dictation

Yes, you have to be connected to Apple's servers to perform dictation. But there was a widely reported story in July that Apple is working on adding offline dictation to iOS 7.

To do dictation, simply touch the microphone key on the onscreen keyboard.
