I made a rice salad last night. Planning to eat that at dinnertime.
Rice salad is a lot like pasta salad, except with rice. I cooked up a pound of thick sliced bacon until I had rendered out the fat but no further, and allowed them to cool on paper towels to soak up excess grease. I cooked 1.5 cups long grain white rice (seasoned with chicken soup base and porcini mushroom powder), and rinsed it after it was done. I chopped up about a full bunch of green onions and cleaned a pint of heirloom grape tomatoes, cutting up the larger ones. When all this was in a bowl I mixed in a jar of salsa Verde.
I just tasted it. It's quite good.

(2,075 posts)Leftover from yesterday. Also made a slaw of thinly sliced cabbage, red onion, fresh diced pineapple and red pepper dressed with a vinegar based dressing. Cheers!🥂

(1,140 posts)BLTs and salad. The salad was mostly lettuce, but with some Caprese - tomato chunks, mozzarella pieces and torn basil. I needed to cut back the basil in the garden considerably and will have to throw the rest into a stir-fry later this week. Some of the lettuce was thinnings from the salad area of the garden, too. (The rest was bought.)
I can hardly wait for more plants to be ready. It's fun going out to shop in the back yard. Now if the squirrels will start leaving my jalapenos alone...
