What's for Dinner, Mon., March 23, 2026

Posting early due to working late.

Chicken breast breaded in panko, filled with ham and Swiss. There's a name for this preparation but I forgot what it is.

Tossed green salad with fennel shavings and parmesan. Also apple slices. Homemade vinaigrette with fresh garden herbs.

Kombucha: unflavored.

Dessert: Vanilla ice cream and a chocolate cookie.

I have a garden session with the Environmental Club at school, but it's rainy and cold so I'll bet we end up inside.

Steam-fried in evoo and veggie broth: chopped onion, orange bell pepper, sliced carrots, sliced mushrooms, cut broccoli, minced shallots and garlic. When done I added canned kidney beans, cooked farro wheat, dried oregano, basil, chopped fresh parsley and a little more evoo. Homemade vegan parm on top after plating. Cheers!🥂

Black bean soup ( jazzed up with half a jalapeño and a small shallot,)
chicken sausages,
a spoonful of mac-n-cheese,
half an avocado,
and a bowl of coleslaw.

Yummy easy comfort food…protein, iron, and lots of fiber.
