Three Cheese Macaroni With Tomatoes

Ingredients


2 pounds elbow macaroni
8 ounces Colby-Jack cheese, cubed
8 ounces Cheddar cheese, cubed
8 ounces white Cheddar cheese, cubed
2 (14 ounce) cans stewed tomatoes, undrained, crushed
1 cup dry bread crumbs

Direction

Set the oven to 350 ° F (175 ° C) to preheat. Grease a medium-sized baking dish lightly.

Boil lightly salted water in a big pot. In the pot, put macaroni
and cook until al dente, about 8-10 minutes; strain.

Combine tomatoes with juice, white Cheddar cheese, Cheddar
cheese, Colby-Jack cheese, and cooked macaroni in the baking
dish. Evenly spread over the top with bread crumbs.

Bake in the preheated oven for 30 minutes until pale brown and
bubbly.

Tofu With Pork And Miso

Ingredients


1/3 cup miso paste
1/2 cup water
1 tablespoon sesame oil
1/4 cup chopped green onion, white and green parts separated
1/3 cup ground pork
1 (14 ounce) package tofu, cubed

Direction

Beat the water and miso together until the miso has fully
dissolved, then put it aside. In a wok or a frying pan, put the
sesame oil and let it heat up over medium-high heat setting. Put
in the white parts of the green onion and let it cook for 30
seconds to 1 minute until you can already smell the aroma of the
onion and the color has turned light. Add the ground meat and
mix well; let it cook for a couple minutes until the mixture is
almost done cooking.

Add the miso paste and tofu and gently mix everything together.
Allow the mixture to simmer and let it cook for a couple
minutes until the tofu becomes warm. Garnish it with the
sprinkled green parts of the green onions on top prior to serving.

Tomato Cakes

Ingredients


1 (14.5 ounce) can peeled and diced tomatoes with juice
1/4 onion, chopped
30 saltine crackers, crushed
1 pinch salt and pepper to taste
3 tablespoons vegetable oil

Direction

In a large bowl, place crackers, onion and tomatoes. Season
with pepper and salt; thoroughly mix. Cover and allow to sit for
about 15 minutes. This will let crackers soak up juices from
tomato. The mixture should become a stiff paste.

Over medium-high heat, heat oil in a large skillet. Shape tomato
mixture into patties; put in hot oil. Fry patties, until both sides
turn golden, flipping once only.

Vegan Mashed Potatoes

Ingredients


2 pounds russet potatoes
8 cloves garlic, peeled and smashed
1 sprig fresh rosemary
1 sprig fresh thyme
1/4 cup olive oil
1 pinch salt and ground black pepper to taste

Direction

In a big pot filled with salted water, add thyme, rosemary, garlic
and potatoes, then bring to a boil. Cook with a cover for a half
hour, until potatoes are easily pierced with a knife. Drain and
save 1 cup of cooking water.

Turn to a bowl with garlic and boiled potatoes, then get rid of
the thyme and rosemary. Put in pepper, salt and olive oil, then
use a potato masher to mash the mixture while putting in more
cooking water to get wanted consistency.
