(36,862 posts)I've spent way too much time in the kitchen the last couple of days. But we got most of our entertaining done for Thanksgiving November 2025.
Using up stuff that has been around a while. Leftover turkey breast and stock from the freezer plus long grain brown rice, celery, carrots and onion. Also some chicken broth from a carton in the pantry. TJ has a cold so she appreciated the comfort food.
Ducky got a bit of turkey meat and skin plus some sliced broccoli stalk that I had blanched and refrigerated. He loves his broccoli.

Sides are green beans with lemon and dill, and grapefruit.

(942 posts)DH wants to try a combination of peanuts and curry powder for the chicken coating. Sure, why not? I'll give it a try. Maybe I'll use the Penzey's Rogan Josh spice mixture, which is a little less hot and a little more sweet. I have a standard Madras type as well, but I want the milder today. I wonder what the coating texture will turn out like. Whatever, it won't go to waste.
The casserole is just Woolton Pie with mashed potatoes on top.

(1,680 posts)Romaine, red lettuce and spring mix was the base. Mixed in minced red onion, sliced radish, shredded carrot and red cabbage and tossed it all with homemade walnut-balsamic dressing. Topped the salads with sliced tomatoes, pickled beets, sliced black olives, sliced avocado, chickpeas and vegan feta crumbles. Made pan toasted baguette slices to go with the salad. Cheers!🥂

(42,065 posts)I'm gonna' try that combo (wanut/balsamic). I like the balsamic glaze.
I also like red cabbage in salads, especially with yellow peppers. Great colors!

(1,680 posts)Heres my go-to recipe that I make in my Nutribullet blender. Very easy to make
Dr. Fuhrmans Walnut-Balsamic Dressing
3/4 cup of cold water
1/3 cup balsamic vinegar
1/3 cup chopped walnuts
1/3 cup pitted dates
1.5 Tbsp Dijon mustard
1/2 tsp oregano (optional)
1/2 tsp garlic powder (optional)
Put all ingredients in the blender and blend until smooth. Adjust the recipe to your liking.
Besides salads, this dressing is great on sandwiches and wraps. Enjoy!
