Spinach Stuffing
1-10 oz package frozen spinach, thawed and chopped
2 tbsp butter
1/4 Ib mushrooms, thinly sliced
1 cup diced celery
1/2 cup onion, chopped
1/4 cup chicken broth
3 cups bread crumbs
1 cup ricotta cheese
1 egg
1 tbsp parsley minced
1 tsp salt
1 tsp poultry seasoning
1/8 tsp pepper
In a large saucepan over medium heat, in hot butter or margarine,
cook mushrooms, celery and onion until tender - about 5 minutes.
Add remaining ingredients and spinach, mix well.
Makes 14 servings.
Stuffing Tip: .
Loosely fill the main turkey cavity with saturated fat stuffing.
Don't pack it in too tightly. You can also stuff the neck cavity,
however the dressing turns out a little drier in texture.

Sausage, Apple Herb Stuffing
1/4 lb turkey sausage
6 cups white bread
1/2 cup celery
1/2 cup onion
2 apples
2 tbsp fresh sage, or 1/2 tsp dried
2 tbsp fresh basil, or 1/2 tsp dried
1 1/2 tsp dried savoury
2 tsp fresh thyme, or 1/2 tsp dried
2 tsp fresh oregano, or 1/2 tsp dried
1/2 tsp salt
1/2 tsp pepper
Cut up the turkey sausage into small chunks. In small, nonstick
saucepan, cook turkey sausage over medium heat for 5-7 minutes
or until no longer pink. In a large bowl, combine sausage, bread,
celery, onion, apples, and herbs.
Makes 14 Servings
How To Make Stuffing in a Baking Dish:
Spray a glass or ceramic baking dish with non-
stick coating. Add enough broth to moisten
the stuffing. Cover and bake until heated |
through about 30 minutes at 350°F (180°C).
Uncover and bake for another 20 minutes until
the top is crisp and golden.

Karens Krockpot Bread Stuffing
Enjoy great stuffing without having to roast and stuff a whole
turkey! Serve this recipe with oven-roasted turkey thighs for
an easy and delicious meal celebration you can enjoy at any
time of the year.
8 cups white bread cubes 2L
1 cup onion, chopped 250 mL
1 cup mushrooms, sliced 250 mL
1/2 cup condensed chicken broth 125 mL
12 cup water 125 mL
1/2. tsp dried sage 2mL
Mix all ingredients gently. Line a crock pot with foil, place stuffing
in foil liner, pack down gently, and cook on low for 4-5 hours. Or,
bake in the oven in a greased shallow baking dish for 30 minutes at
350 °F (180°C). Makes 6 servings.

Homemade Turkey Stuffing
This easy stuffing recipe is inspired by Grandmas
I never liked Turkey Stuffing till I tried hers! This turkey
stuffing is loaded with savory flavors, turkey meat and
it's so satisfying!
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
Servings: 16 servings
Ingredients
6 cups dry bread cubes about 12 ounces. sourdough, white, wheat etc. stale and dry and cubed.
3 cups brown turkey meat cooked & chopped. or cooked sausage, if you want to leave your turkey whole for carving.
2 cups celery chopped
2 cups onion diced
2 1/2 cups turkey broth or pan drippings.
1/2 cup butter divided (1/4 cup for sautéing, 1/4 cup for the stuffing mix)
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon dried thyme leaves
1 teaspoon rubbed sage
1/2 teaspoon garlic powder.
1/2 teaspoon pepper
Instructions
Prepare Pan & Sauté Vegetables: Preheat your oven to 350°F (175°C) and grease a 7×11 inch baking dish. In a large skillet, melt ¼ cup of the butter over medium heat. Add the chopped celery and onions and sauté until they are soft, about 5-10 minutes.
Combine Ingredients: In a large bowl, combine the bread cubes with the sautéed vegetables and any liquid from the pan. Add the cooked turkey meat (or coked sausage) and all of the seasonings: salt, pepper, sage, thyme, onion powder, and garlic powder. Toss to combine.
Add Liquid: Drizzle the stuffing mixture with the turkey broth or pan drippings and the remaining ¼ cup of melted butter. Toss until everything is well-combined and the bread is moist.
Bake: Pour the stuffing mixture into your prepared baking dish and spread evenly. Cover the dish with aluminum foil or an oven-safe lid. Bake for about 25 minutes, remove foil and bake 5-10 more minutes until golden brown and heated through.
Cool & Serve: Let the stuffing cool for about 10 minutes before serving. Enjoy!

I used to make a favorite cornbread/sausage/dried cherry stuffing, but we don't really do Thanksgiving anymore so it's been at least ten years since I made it. Good memories!
