What's for Dinner, Sun., Nov.16, 2025

A Kevin's cuisine prepared meal. A friend who had to go out of town gave me this and a couple other items. She didn't want to throw them out, as she'll be gone over a week. I've never had this, but I cooked it up out of curiosity and tasted it. This one is chicken in Thai coconut mustard sauce. I was pleasantly surprised and look forward to having it for the evening meal.

I have couscous made already, so I'll serve it over the pignoli nut couscous.

Their concept is kind of interesting. The chicken was in a sous vide bag, and the sauce in a sealed bag.

Boston lettuce and frilly mustard greens salad with cherry tomatoes, green and yellow pepper, carrot, red onion, and cucumber.

Kombucha: cherry ginger.

Dessert: chopped apple, grapes, and a tangerine with hot ginger drink.

I’m preparing a casserole I make a lot when I’m flying solo: leeks, cabbage, sweet Italian sausage, black pepper. So satisfying on a chilly day.

It’s now at ShopRite.

I’m having roast pork loin, brown basmati rice and sautéed beets, carrots and parsnips. There goes the timer!

Cheese and spinach ravioli. Rao's marinara sauce. Grated parmesan cheese.
Ice water, sugar-free Dr Pepper, sugar-free root beer or regular coca cola.
Possible small green salad with dressing choices.
Cherry Garcia or cookie-dough ice cream.

THIS sounds good to me, for Tuesday:

Homestyle Turkey Green Chili and Shredded Cheddar
This chili features ground turkey, poblano and jalapeno peppers and zucchini, seasoned to perfection with chili powder, cumin, black pepper, and garlic. The abundance of garnishes — shredded cheddar, fresh cilantro and sour cream — make it even tastier!

Right now, a Bartlet pear (with Nutella.)

Chicken and beef skewers grilled along with orange and green peppers, onions and mushrooms. I marinated the meats in olive oil, Balsamic vinegar and seasoned with chopped garlic, salt & pepper. Rice and a green salad on the side. We’re in Panama so Balboa Roja beer for beverages.

Steam-fried in evoo and veggie broth: chopped onion, green bell pepper, cauliflower florets, sliced mushrooms, and minced ginger and garlic. When done I added some cooked green peas and air-fried tofu cubes. Finally I added some Patak’s Jalfrezi curry sauce and gave it a good stir. Serving over organic basmati brown rice. Chopped scallions on top. Cheers! 🥂

11. Vegan mac & cheese...

… with mixed veg and a whole bag of Quorn (vegan “chicken”) nuggets. Normal serving for me, a little less stolen for my lunch tomorrow, and the rest of a pretty damned full skillet to fill than never-empty hole in my grown son’s belly.

After I served him, he admitted he’d already made and eaten a can of soup and a sandwich. There were no leftovers.
