ZESTY BUTTER BEAN BAKE
Mrs. Genevieve Harris, Hazlehurst
2 tablespoons chopped onion
2 tablespoons chopped green pepper
1 tablespoon butter
1 (10 1/4-ounce) can condensed tomato soup
1/4 cup water
1 tablespoon vinegar
1 tablespoon brown sugar
1 teaspoon prepared mustard
2 (1-pound) cans butter beans, drained
Brown onion and green pepper in butter. Add remaining ingredients
except beans. Heat. Pour beans in buttered 1 quart casserole, pour
sauce over. Bake in a 375 degree oven 45 minutes.
Serves 6.

BBQ Butter Beans
1 (10.7-ounce) can tomato soup
1 cup firmly packed brown sugar (Ed. 1 cup vs 1 tbsp in prvs. recipe!)
1 3/4 tablespoons dry mustard (instead of 1 tsp.)
1/3 pound uncooked bacon, cut into pieces
1 medium onion, chopped
1 green bell pepper, chopped
3 (16-ounce) cans butter beans, drained
Preheat the oven to 350 degrees.
Mix the tomato soup, brown sugar, and dry mustard
in the bottom of a 2-quart baking dish. Combine
the bacon, onion, green pepper, and butter
beans in a large bowl and mix well. Spoon into
the baking dish and bake for 1 to 1 1/2 hours, or
until the onion and bell pepper are tender.
MAKES 12 SERVINGS

BUTTER BEAN CASSEROLE
Mrs. Homer Gray, Kosciusko
1 1/4 cups liquid from beans, or water
3 (no. 303) cans small lima beans or use fresh beans
1 cup ripe olives, chopped
1 cup American cheese, grated
1/4 cup vegetable oil
1 cup chopped onion
1 cup chopped green pepper
1 clove garlic, minced
1 tablespoon cornstarch
1 teaspoon salt
1 tablespoon chili powder
Heat oil in skillet; add onion, pepper and garlic. Cook until tender.
Blend in cornstarch, salt, chili powder, and 4 cup of liquid. Add re-
maining liquid, beans, olives and 1/2 cup cheese. Mix well and pour in
1 1/2 quart greased casserole. Bake at 350 degrees about 30 minutes.
Put remaining cheese on top just before serving, and put in oven long
enough to melt cheese.
Serves 8.

(7,303 posts)I have to go to a specialty store up here in Oregon to find canned butter beans. One of my favorite slow meals is ham hocks, butter beans and cornbread. Now I have some new things to try. Thanks!
