My weekend
On Saturday, at the crack of dawn, I got to the Farmers' Marked. Scored too much eggplant for Sunday's (& Tuesday's) moussaka. I'll have to dry half of it, but I couldn't buy less. Also got enough underripe peaches to make 7 pints plus a taster of canned peaches. Enough tomatoes for tomato sauce for the moussaka. Plus a lovely cauliflower. Total $24.
Came home and got DH and myself to CVS for our Covid and flu jabs. Meanwhile, we'd found out that morning that our annual Greek festival at a nearby church was happening this weekend (surprise!), so that threw any dinner plans out the window. All tips are going to charities, including the local school shooting. We attended and had a good time, as well as the usual good food. No dinner Saturday night. I spent the afternoon and evening canning peaches. 7 pints plus 1 taster. I also did some laundry - DH wanted to try my Greek red wine and dropped it all over my nice slacks. I got it all out - no harm done. Thank the gods! - I don't have that many good clothes.
Today I washed off and stored the peach jars. Drove around doing errands and scored cheap well-dated 10# unbleached flour and 10# white granulated sugar. Counting what we've already got, we've now got about a years' worth. Made the moussaka. I'm currently taking a break, but will have to get the dishes squared away and get the excess eggplant drying later.
I'm going to treat the eggplant the same way I treat tomatoes. Dehydrate them thoroughly and let them sit till I have enough for the next step. Blanch them quickly in boiling red wine vinegar. Put them in a sterilized jar and cover them with olive oil. This gives you the equivalent of sun-dried tomatoes in oil and there's written data that says that the same treatment can apply to eggplant. In any case, anything beats throwing it out. You're supposed to be able to keep them in a room temp cabinet, but I'm too paranoid - they live in the fridge.
I know this stuff won't last more than a year (or so). When I have to replace it, I'm worried it will cost at least 50% more and I don't know how I'll manage that. Gods, I hope I'm wrong!
