What's for Dinner, Fri., May 23, 2025

I started this Mediterranean Chickpea Salad from a Taste of Home recipe last night. I'll just have to add a few items this afternoon and I'll have dinner ready. Would be nice to have a baguette, but an artisan roll can fill in to pick up all those delicious flavors of cucumber, tomato, and garlic. Yummmm.

It will look like this 'cuz I'm going heavy on that goat cheese! Fresh herbs from my garden: basil, oregano, and parsley!

Kombucha: apricot.

Dessert: tiramisu.

Adding sauvignon blanc shrimp shell broth to the sauté. Grated parmigiano reggiano and Italian parsley to finish.

it again tonight. Strawberries, grapes, cucumbers, egg, pepperoni, rasins, etc and ranch dressing.

5. Shrimp Cauliflower Penne

While I air fried cut seasoned cauliflower florets I sautéed chopped onions and minced garlic in evoo and veggie broth. I then added sliced mushrooms. When the cauliflower was done I tossed it along with cooked whole wheat penne and the onions and mushrooms. I tossed everything while I air fried seasoned wild caught shrimp. The shrimp topped the penne/cauliflower after it was plated. Cheers! 🥂
