I need help. Made a dressing for a chickpea, tomato and cuke salad.

Doesn't taste very good. I put 4TBSP of red wine vinegar in 1/2 cup olive oil. 1/2 tsp of both salt and pepper. 1 tsp of cumen.

I have garlic, maple syrup and other spices. How do I fix this?

* I added 1 more tbsp red wine vinegar. Tsp garlic and 1 tsp maple syrup 1/4 tsp salt (I knew I was going to add feta which is salty). Oregano too. It is delicious. Than you all.

Is it too acidic? Too bland? LauraInLA May 2025 #1

No try a half teaspoon and taste test. Ritabert May 2025 #5
For me, 1/2 tsp salt for all that would not be nearly enough -- and would explain the taste not so great. Maybe a fierywoman May 2025 #6

Needs more vinegar and some garlic, imo SheltieLover May 2025 #8
I'd add a bit more salt and pepper and definitely start with 1/2 teaspoon garlic powder, then taste-test. LauraInLA May 2025 #9

I use 1 sliced tomato, 1/2 peeled and sliced English cucumber, some thin sliced red onion, and chickpeas, but I dress it with about a tablespoon-ish of olive oil and about 2-3 times that much red wine vinegar, often with a splash of seasoned rice vinegar too, salt and pepper to taste, and a good pinch of sugar. I often crumble up some dried oregano on it, too.

Hope this helps!

Someone else mentioned crumbled dried oregano, which should go with the cumin. All such good suggestions!

willing to do the research. Oh, I also added 1/2 tsp. of ginger that added a wonderful zingy flavor. Thanks for sharing everyone!!
