4 AM and I can’t sleep either. Good morning, saw my hummingbirds yesterday at my feeder so I feel a little better. I will mix up some fresh sugar water as soon as it gets daylight. Gives me purpose.

For the last several weeks, I’ve been blending Icelandic Skyr* with organic fruit — like strawberries, bananas, oranges, etc. Also tried mixing it with coffee extract and/or dark organic chocolate. No sugar needed.

Both Apollo and my fave is Creamsicle (just like the old-fashioned ones of long ago), using peeled organic oranges, including the pulp, and blending to a liquid, then mixing with Skyr. Churn in ice cream maker and pour into popsicle molds. Super good and super healthy. Did I mention I’m a health nut?

Ajax is not interested in the creamsicles. He’s more of a meat and meat kinda guy.

If you want, I’ll post the exact recipe.

*Skyr is delicious and super-nutritious type of Greek yogurt, but with lower fat, higher protein, higher calcium, milder, taste, thicker and creamier texture. Available in the yogurt aisle of grocery. Google “health benefits of Skyr compared to Greek yogurt” to see nutrition details.
